Noodle Kugel - cooking recipe

Ingredients
    2 eggs or equivalent amount egg substitute
    8 oz. wide noodles, cooked according to pkg. directions
    1/2 c. skim milk
    1/2 c. golden raisins, plumped
    1/2 c. cottage cheese (small curd, low sodium and low-fat)
    1 tsp. cinnamon
    1 (16 to 17 oz.) can apricots or pineapple, well drained and cut in bite size chunks
    1/4 c. sugar
Preparation
    Beat eggs; add all other ingredients to noodles and put in greased 8 x 8-inch baking dish or pan.
    Bake at 325\u00b0 for 1 hour. If not serving immediately, turn temperature down to warm and cover with aluminum foil.
    Serves 12.
    This makes a good accompaniment to roasted meats or to a brunch buffet.
