Ratatouille - cooking recipe

Ingredients
    onions, cut up
    eggplant, cubed
    green pepper, cut up
    celery, cut up
    zucchini, cubed or sliced
Preparation
    Cook onions slightly, using little oil.
    Add eggplant, pepper and celery.
    Cook, stirring frequently, to keep from sticking. Add tomato or vegetable juice; simmer for about 20 to 30 minutes. Add zucchini; cook for another 10 minutes or so.
