Black-Eyed Pea'S Baked Squash - cooking recipe

Ingredients
    5 lb. medium size yellow squash
    2 eggs
    1 c. bread crumbs (whole wheat bread or rolls)
    4 oz. butter
    1/4 c. sugar
    2 tsp. salt
    2 Tbsp. chopped onions
    dash of pepper
Preparation
    Cut off tips of squash.
    Cut squash into 3 or 4 pieces.
    Place in pan; add water to cover.
    Cook until tender.
    Drain in a colander.
    Mash and add eggs, bread crumbs, butter, salt, onion and pepper.
    Put in a casserole dish; cover with a light layer of bread crumbs.
    Bake at 350\u00b0 until lightly browned.
    Makes 10 servings.
