Shrimp Creole - cooking recipe

Ingredients
    1 c. flour
    1 c. oil
    2 c. chopped onions
    1 c. chopped celery
    1/2 c. chopped bell pepper
    2 cloves, chopped garlic
    3 lb. raw, deveined shrimp
    1 large can tomatoes
    2 small cans tomato paste
    3 tsp. salt
    1/4 tsp. red pepper
    1/2 tsp. black pepper
    2 Tbsp. chopped parsley
    2 Tbsp. chopped onion tops
Preparation
    Make roux (brown over slow fire, stirring constantly) of flour and oil.
    Add onions, celery, bell pepper and garlic; cook until soft.
    Add tomatoes and tomato paste; mix well and cook about 5 minutes.
    Add 6 cups water and let simmer about 1 hour.
