Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick cooking oatmeal
    1 c. buttermilk
    1 egg, beaten
    1/2 c. brown sugar
    1/3 c. melted shortening
    1 c. plain flour
    1 tsp. baking powder
    1/2 tsp. soda
    1 tsp. salt
Preparation
    Soak oatmeal in buttermilk for one hour.
    Add beaten egg and brown sugar.
    Mix and stir dry ingredients; then add these in liquid ingredients.
    Add melted shortening, mixing well but do not beat too much.
    Fill greased muffin tins 2/3 full and bake at 400\u00b0 for 20 minutes.
    Makes 16.
