Crawfish Fettucini - cooking recipe

Ingredients
    3 medium onions, finely chopped
    3 celery ribs, finely chopped
    2 bell peppers, finely chopped
    1 c. (2 sticks) margarine
    1/4 c. flour
    3 Tbsp. dried parsley
    3 to 4 garlic cloves, minced
    3 lb. crawfish, peeled tails
    1 lb. Velveeta cheese, cut in small pieces
    3 Tbsp. Old El Paso jalapeno relish or salsa or picante sauce
    1 (12 oz.) pkg. fettucini noodles
    grated Parmesan cheese
    salt and pepper to taste
Preparation
    Using a big pot, saute onions, celery and bell peppers in margarine.
    Mix flour with a little water and add to onion mixture.
    Cover and cook on low heat for 15 minutes.
    Add parsley, garlic, crawfish, half of the Velveeta cheese, relish, salt and pepper.
    Cook for 30 minutes.
    Cook fettucini according to package directions.
    Add fettucini.
    Pour into a large, greased casserole. Top with remaining Velveeta cheese and sprinkle with Parmesan cheese.
    Bake at 350\u00b0 for 15 to 20 minutes or microwave just until it is heated and cheese is melted.
