Sweet And Sour Chicken Or Shrimp With Rice - cooking recipe

Ingredients
    1 (8 oz.) can pineapple chunks (packed in own juice)
    1/4 c. apple cider vinegar
    2 Tbsp. soy sauce (low sodium)
    water
    2 Tbsp. oleo, melted
    2 Tbsp. chopped bell pepper
    1 clove garlic, chopped
    2 carrots, cut in thin strips
    2 green onions, chopped
    1 c. sliced mushrooms
    1/2 c. sliced water chestnuts
    1 1/2 c. Minute rice
    strips of cooked chicken or shrimp
Preparation
    Drain pineapple, reserving juice, and cut pineapple into smaller chunks.
    To pineapple juice, add vinegar, soy sauce and enough water to make 1 1/2 cups plus 1 tablespoon liquid.
    Into oleo in skillet, put the bell pepper, garlic, carrots, green onions, mushrooms and water chestnuts; add liquid and stir in rice, pineapple and chicken or shrimp.
    Bring mixture to a simmer, cover and cook for 5 minutes.
    Remove from heat.
    Let stand 5 minutes, then fluff mixture with a fork.
