Cucumber Relish - cooking recipe
Ingredients

25 or 30 large cucumbers
1/2 c. salt
2 tsp. pepper (black)
1 tsp. red pepper
2 or 3 c. sugar
2 or 3 c. vinegar
onions as you like
Preparation

Chop cucumbers and onions; put 1/2 cup of salt over them.
Let stand 45 minutes until it makes a brine; drain.
Mix all other ingredients; pour over cucumbers and onions.
Cook over medium heat until it changes color.
Pack into jars and seal.
Makes around 12 quarts according to size of cucumbers and onions.
