Sweet Pickle Relish - cooking recipe

Ingredients
    4 cucumbers, unpeeled
    3 c. onions
    1 1/2 c. red and green peppers
    3 c. finely diced celery
    1/4 c. salt
    3 1/2 c. sugar
    2 c. white vinegar
    1 Tbsp. each: celery seed and mustard seed
Preparation
    Combine vegetables.
    Sprinkle with salt and cover with cold water.
    Let stand 4 hours.
    Drain and rinse.
    Press out all excess liquid.
    Combine sugar, vinegar and seeds.
    Bring to a boil until sugar is dissolved.
    Add vegetables; simmer 10 minutes.
    Fill jars and seal.
