Crab Gumbo - cooking recipe
Ingredients

1 c. celery chopped
2 garlic cloves chopped
3 medium onions chopped
2 c. flour
1 c. bacon dripping or peanut oil
2 lb. brown crabmeat or 1 claw and 1 white
2 lb. okra chopped
2 2 1/2 c. tomatoes chopped
salt and pepper to taste
3 quarts of hot water
Preparation

Brown in flour in oil until golden brown or darker.
Add chopped vegetables, saute 5 to 10 minutes.\tPour vegetables in 6 quart pot, add water; let simmer for 30 minutes.
Add tomatoes, let simmer for one hour. Then add okra, cook 15 minutes. Add crabmeat, let simmer for 15 more minutes.
Serve over rice.
I like to saute my okra in small amount of oil for 10 to 15 minutes the add to gumbo, not sticky.
For seafood gumbo add 2 pounds of shrimp and one pint of oysters.
