Mom'S Zucchini Bread - cooking recipe

Ingredients
    3 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. soda
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 c. chopped nuts
    3/4 c. vegetable oil
    3 eggs
    2 c. sugar
    2 tsp. vanilla
    3 c. unpeeled shredded zucchini
    1 tsp. cardamon (optional; Indian spice)
Preparation
    Combine dry ingredients.
    Add oil, egg and vanilla.
    Mix well. Stir in zucchini.
    Spoon into 2 greased and floured 9-inch loaf pans.
    Bake at 350\u00b0 for 1 hour.
    Cool 10 minutes before removing from pans.
    Makes 2 loaves.
