Carrot Casserole - cooking recipe
Ingredients

4 c. carrots, shredded or sliced very thin and cooked until tender
1/2 c. Cheddar cheese, grated
1 medium onion, diced
1 c. Ritz crackers, crushed
3 Tbsp. butter or margarine, melted
1/4 tsp. salt
1/8 tsp. pepper
3/4 c. tomato juice
Preparation
-
Mix all ingredients together except juice.
Spoon into deep pie plate.
Pour juice over top.
Bake for 30 minutes at 375\u00b0.
