Spanish Pork Chops - cooking recipe
Ingredients

4 thick center cut pork chops
4 whole tomatoes
1 large Spanish onion
1 1/2 to 2 c. Minute rice
Preparation

Grease a 10 or 12-inch frying pan.
Brown pork chops on 1 side and season to taste.
Cook rice while starting pork chops.
Turn chops and season.
Drain rice.
Place a 1/4 to 1/2-inch slice of onion on each chop.
Spoon on rice.
Add 1 whole tomato on each onion.
Add more tomatoes if you want more juice.
Add more seasoning if desired.
Cover pand and simmer for 45 minutes.
Test with fork and simmer longer if necessary.
Serves 4.
