Chicken Livers Madeira - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    1/2 c. Madeira wine
    1 c. chicken broth
    1 lb. chicken livers, cut into quarters
    1 Tbsp. cornstarch
    1/8 tsp. black pepper
    pinch of salt (optional)
    pinch of cayenne pepper
Preparation
    In a large skillet, heat butter, then saute livers until lightly browned.
    Stir in wine.
    In small bowl, stir broth into cornstarch; stir mixture into skillet.
    Cook, stirring, until sauce is thick and smooth.
    Add salt and peppers.
    Serve over rice, noodles or toast.
    Makes 4 servings.
