Lenten Stuffing (Meatless)(Hashwi Bedoun Laham) - cooking recipe

Ingredients
    1/2 c. chickpeas, soaked overnight
    1 1/2 c. rice, washed and drained
    1/2 c. parsley, finely chopped
    1/2 c. green onions, finely chopped
    2 Tbsp. fresh mint, chopped, or 1 Tbsp. dry
    2 medium tomatoes, finely diced
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. cinnamon
    3/4 c. vegetable oil
    1/2 c. lemon juice
Preparation
    Drain chickpeas and place on tea towel.
    Roll over with a rolling pin to crack the skin.
    Place in a mixing bowl with 3 to 4 cups of water.
    Remove the skin that floats to the top and discard.
    Drain.
    Add all remaining ingredients.
    Mix well.
