Mexican Corn Bread - cooking recipe

Ingredients
    1/2 lb. Cheddar cheese
    1 medium onion, chopped
    2 to 3 jalapeno peppers
    1 lb. ground beef
    1 c. yellow cornmeal
    2 eggs
    2 c. creamed corn
    1 c. milk
    1/2 c. bacon drippings
    3/4 tsp. salt
    1/2 tsp. soda
Preparation
    Grate Cheddar cheese; chop onion and jalapeno peppers; brown beef and drain well.
    Mix and set aside: cornmeal, eggs, corn, milk, bacon drippings (very essential for flavor), salt and soda. Preheat oven to 325\u00b0.
    Grease bottom of cast-iron skillet; cover bottom with corn meal and brown slightly on top of stove.
    Pour 1/2 batter into skillet; layer cheese, meat, onions and peppers. Cover with remaining batter and bake 45 to 50 minutes.
