Dijon Chicken Roll-Ups - cooking recipe

Ingredients
    2 whole chicken breasts, skin and bones removed and pounded to flatten
    3 oz. Swiss cheese, cut into 8 strips
    1/2 c. flavored bread crumbs
    5 Tbsp. margarine or butter
Preparation
    Spread chicken with Dijon mustard.
    Place 2 slices of cheese on each breast.
    Roll up and secure with toothpicks.
    Place chicken into microwave-safe baking dish.
    Melt margarine 30 seconds in glass measuring cup and pour over chicken.
    Shake bread crumbs over chicken and cook on High 8 to 10 minutes, covered. Turn chicken rolls over and rearrange once.
    Allow to stand covered for 5 minutes before serving.
