Ozark Pork Roast - cooking recipe
Ingredients

1 (2 to 2 1/2 lb.) pork loin roast
1/2 tsp. pepper, divided
3/4 tsp. salt, divided
1/4 c. all-purpose flour
1/4 c. margarine, melted
2 Tbsp. vegetable oil
1 medium onion, chopped
4 carrots, cut into 1-inch slices
4 medium potatoes, peeled and halved
Preparation

Rub 1/2 teaspoon of salt and 1/4 teaspoon of pepper over roast.
Dredge in flour.
Brown roast on all sides in margarine and oil in a large, deep, cast-iron skillet.
Remove roast from skillet; drain on paper towels.
Saute onion in drippings until tender.
Place roast over onions.
Add carrots and potatoes. Sprinkle remaining salt and pepper over vegetables.
Cover and bake at 350\u00b0 for 1 1/2 hours or until meat is done.
Place vegetables around roast to serve.
Serves 4.
