Watermelon Rind Pickles - cooking recipe

4 qt. cubed watermelon rind
1 gal. cold water
1 c. salt
2 c. vinegar
6 to 7 c. sugar
1 Tbsp. whole cloves
1 Tbsp. allspice
1/4 tsp. mustard seed
3 cinnamon sticks
1 lemon, sliced thin
Preparation

Remove green and pink from watermelon.
Cut into 1-inch pieces.
let stand overnight in salt and water.
