Two Grain Lemon Pilaf - cooking recipe

Ingredients
    1 1/2 c. chicken broth
    3/4 c. sliced celery
    1/2 c. chopped onion
    1/4 c. uncooked barley
    1/4 c. uncooked brown rice
    3 tsp. dried parsley flakes
    1 Tbsp. margarine or butter
    1 1/2 tsp. grated lemon peel
Preparation
    In medium saucepan, bring chicken broth to a boil.
    Stir in celery, onion, barley and rice.
    Reduce heat.
    Cover; simmer 45 to 50 minutes until barley and rice are tender and liquid is absorbed. Add parsley, margarine and lemon peel; toss with fork to blend. Makes 4 servings.
