Picadillo (Filling For Tacos) - cooking recipe
Ingredients

1 lb. ground beef
1/2 c. diced onion
2 or 3 cloves garlic, minced (if desired)
1 large tomato
1 or 2 potatoes, diced
1 or 2 carrots, diced
1/2 c. peas
1 tsp. salt
2 Tbsp. fresh cilantro, chopped (available in Cub Foods produce)
1 or 2 jalapeno peppers, diced
Preparation

Cook ground beef until browned.
Drain off excess fat.
Add onion, garlic and peppers.
Cook until tender.
Stir in remaining ingredients.
Cover and simmer for 20 to 25 minutes.
Serve as a filling in corn or flour tortillas that have been warmed on a grill or in the microwave.
Serve with hot sauce.
Especially good with frijoles (beans).
