Genoese Cake - cooking recipe
Ingredients

2 c. sugar
1 lb. butter, softened
pinch of salt
1 c. Mandarin Marmalade
3 3/4 c. sifted cake flour
16 eggs
1 vanilla bean
2 Tbsp. Mandarin Napoleon (optional)
Preparation

In a large pan, preferably copper, mix sugar, eggs, salt and vanilla bean.
Over very low heat, gently beat the ingredients with a whisk.
This process can be done in a double boiler.
When the mixture begins to foam and rise well up in pan, remove from heat and continue whisking until the mixture is cold.
Remove vanilla bean.
Continue beating, gradually adding flour via a sifter. Whisk in softened butter.
