Summer Melon Salad - cooking recipe
Ingredients

2 c. diced, cooked chicken
1 orange, sectioned, sliced or use canned mandarin oranges
1/4 c. seedless white grapes
1 c. cantaloupe balls - can use frozen
1/2 c. toasted slivered almonds
1/2 c. homemade mayonnaise
6-8 cantaloupe rings or halves peeled
lettuce leaves
mint or watercress
Preparation

Combine chicken, orange sections, grapes, cantaloupe balls, almonds, and mayonnaise.
Chill.
Arrange cantaloupe rings on lettuce and fill with chicken salad.
Garnish with mint or watercress.
Serves 6 to 8.
