Beef Skillet Fiesta(Serves 4 To 6) - cooking recipe
Ingredients

1 lb. ground meat
1 Tbsp. salad oil
1/4 c. diced onion
2 tsp. salt
1 tsp. chili powder
1/4 tsp. pepper
1 (1 lb.) can tomatoes (or more)
12 oz. frozen corn
12 oz. frozen limas
1 1/4 c. bouillon (1 cube), dissolved in 1 1/4 c. boiling water
1/2 c. strips green pepper
1 1/3 c. Minute rice or 2/3 c. Uncle Ben's regular rice
Preparation

Brown meat in oil over high heat in skillet.
Break meat up or leave in coarse chunks.
Add onion.
Reduce heat to medium and cook until onion is tender, but not browned.
Add seasonings, tomatoes, corn, beans and bouillon.
Bring to a boil and cook until vegetables are done.
Stir in green pepper.
Boil again.
Stir in rice.
If using instant rice, remove from heat.
Cover and let stand 5 minutes.
Fluff with a fork.
If using Uncle Ben's regular rice, cook all ingredients together 25 minutes.
