Apricot And Currant Chicken - cooking recipe

Ingredients
    2 chickens, quartered
    1 tsp. ground ginger
    1 1/2 c. orange marmalade
    1/3 c. apple juice
    1/3 c. orange juice
    8 oz. dried apricots
    8 oz. dried currants
    1/4 c. brown sugar
Preparation
    Preheat oven to 375\u00b0.
    Place chicken skin side up in shallow pan.
    Sprinkle with salt and pepper and ginger.
    Spread marmalade over chicken and pour apple and orange juice into pan.
    Bake 20 minutes.
    Remove from oven and add dried fruit in juice to pan. Sprinkle fruit with brown sugar and return to oven.
    Bake, basting often, 40 to 45 minutes.
    Remove chicken and dried fruit to platter.
    Pour sauce into gravy boat and serve with chicken.
