Mexican Squash - cooking recipe

Ingredients
    5 to 8 yellow squash
    3 Tbsp. minced onion
    6 Tbsp. butter
    1 1/2 c. Cheddar cheese, grated
    1/2 to 1 can Ro-Tel tomatoes and green chilies
    salt and pepper to taste
    Ritz cracker crumbs
Preparation
    Peel squash and slice.
    Cook with minced onion until tender. Drain well and place in a casserole with 4 tablespoons of butter, cheese, tomatoes, salt and pepper.
    Stir all ingredients.
