Black-Eyed Pea Cakes - cooking recipe

Ingredients
    1/2 c. red onion, minced
    4 garlic cloves, minced
    1/4 c. red bell pepper, minced
    2 jalapenos, seeded and minced
    2 Tbsp. butter
    2 c. cooked black-eyed peas
    2 egg yolks
    1 tsp. Tabasco
    1 tsp. cumin
    1 tsp. black pepper
    1 c. fine fresh breadcrumbs
    cornmeal
    salsa
Preparation
    Saute onion, garlic, bell pepper and jalapenos in butter.
    In a bowl, combine them with the remaining ingredients and chill about an hour.
    Form small patties from the batter and coat them with yellow cornmeal.
    Fry in vegetable oil in a skillet until browned. Serve with salsa.
    Yield:
    10 cakes.
