Chili Pasta Grande - cooking recipe
Ingredients

Mazola (no stick spray)
1 medium onion, chopped
1 (14 oz.) can Italian stewed tomatoes
1 (10 oz.) can kidney beans, rinsed and drained
1 pickled jalapeno pepper, chopped (about 1 Tbsp.)
2 tsp. chili powder
1/4 tsp. ground cumin
4 oz. (about 1 c.) cooked elbow macaroni
1/2 c. light sour cream
chopped cilantro (optional)
Preparation

Generously spray large skillet with cooking spray.
Heat over medium heat.
Add onion.
Cook stirring constantly 2 minutes.
Add undrained tomatoes, kidney beans, jalapeno pepper, chili powder and cumin.
Bring to boil.
Reduce heat and simmer, stirring occasionally, 15 minutes.
Toss with elbows.
Serve with sour cream and cilantro.
Makes 4 servings.
