Carrot Fruitcake - cooking recipe

1 c. pitted orange-essence flavored or plain prunes
1/3 c. hot water
2 large eggs
whites from 2 large eggs
2 tsp. fresh grated orange peel
1/2 c. orange juice
1/4 c. vegetable oil
2 3/4 c. all-purpose flour
2 tsp. baking powder
1 tsp. soda and salt
3 c. shredded carrots
1/2 c. toasted chopped walnuts
1/2 c. semi-sweet mini chocolate chips
Preparation

Heat oven to 350\u00b0.
Grease and flour 12 Bundt shape muffin pans, two 6-cup pans or one 12-cup Bundt pan.
