Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    2 eggs, beaten
    1/2 stick margarine
    1 c. cracker crumbs
    1 green pepper, diced
    2 pimentos, diced
    1 large onion, diced
    2 c. chopped tomatoes
    1 c. grated cheese
    salt and pepper to taste
    1/2 c. grated sharp cheese (optional)
Preparation
    Pare eggplant and cut in 1-inch cubes.\tCook in boiling salt water
    for\t10 minutes and drain.
    Add next 8 ingredients and mix well.
    Add\tseasonings.
    Pour in greased baking dish. Sprinkle with
    sharp Cheddar cheese.
    Bake at 350\u00b0 for 1 hour. Yields 8 servings.
