"No-Fat" Cream Of Potato Soup - cooking recipe

Ingredients
    3 potatoes, pared and sliced
    1 onion, minced
    2 c. fat skimmed chicken broth
    1 1/2 c. water
    salt and white pepper to taste
    3 Tbsp. minced chives (optional)
Preparation
    Combine potatoes, onion, broth and water in saucepan.
    Simmer, covered, for 35 minutes.
    Pour into blender or beat by hand until smooth.
    Return to pan and bring to boiling.
    Stir in milk. Reduce heat and simmer, covered, 4 to 5 minutes.
    Sprinkle salt, pepper and chives on top.
    Serves 8.
