Corn Bread Muffins - cooking recipe
Ingredients

1 c. flour
1/4 c. nonfat dry milk
2 tsp. baking powder
1/2 tsp. salt
1/2 c. yellow cornmeal
2 eggs, slightly beaten
1/2 c. water
3 Tbsp. salad oil
Preparation

Preheat oven to 400\u00b0.
Lightly oil muffin tins.
Sift together flour, nonfat dry milk, baking powder and salt.
Add cornmeal and mix well.
Combine eggs, water and salad oil and add to dry ingredients, stirring just until moistened.
Fill muffin tins 2/3 full.
Bake for 20 minutes.
Makes 16 muffins, 81 calories per muffin.
