Microwave Lemon Chicken And Rice - cooking recipe

Ingredients
    1 lb. boneless, skinless chicken breast, cut into 1/2-inch chunks
    1 1/2 c. chicken broth
    1 1/2 c. Minute rice
    1 red pepper, cut in strips
    1 zucchini, thinly sliced
    1/2 tsp. grated lemon peel
    3 Tbsp. lemon juice (fresh)
    2 Tbsp. butter
    1 Tbsp. cornstarch
    1/2 tsp. garlic powder
Preparation
    Mix chicken, broth, rice, pepper, zucchini, lemon peel, lemon juice, butter, cornstarch and garlic powder in 2-quart microwave casserole.
    Cover.
    Microwave on High 10 minutes or until chicken is cooked through, stirring halfway through cooking time.
    Let stand 5 minutes.
    Stir.
