Crispy Old-Fashioned Potato Pancakes - cooking recipe

Ingredients
    1/4 c. shortening (Crisco)
    2 eggs
    1/4 c. milk
    1/4 c. Bisquick baking mix
    1 tsp. salt
    2 c. finely shredded, uncooked potatoes, well drained (blending on \"grate\" a few seconds does it great)
Preparation
    Make a batter using only the yolk for the moment.
    Beat the egg white or whites until they form a peak.
    Then fold the beaten egg whites in the batter.
    Dip tomatoes in the batter and fry. Serve with smothered onion and green peppers.
