Ingredients

1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. cloves
1/4 to 1/2 tsp. salt
2/3 c. vinegar
1/2 c. water or beet liquid
4 c. beets, cooked and sliced or 2 (16 oz.) cans sliced beets, drained
Preparation

Combine first 4 ingredients well in saucepan; stir in vinegar and water.
Bring to boil, stirring.
Add beets.
Return to boil; reduce heat.
Cover; simmer 5 minutes.
Cool.
Chill liquid 8 hours before serving.
Cover, store in liquid, chilled, up to one month. Drain before serving.
