Overnight Raisin Oatmeal Pancakes - cooking recipe

2 c. old-fashioned oatmeal
2 c. milk
2 eggs
1/4 c. margarine, melted
1/3 c. raisins
1/2 c. flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. salt
Preparation

Mix oatmeal and milk.
Cover and refrigerate overnight.
When ready to cook, beat in eggs and margarine.
Stir in raisins.
Add dry ingredients and stir just until moistened.
If batter seems too thick, add more milk, 1 tablespoon at a time, up to 3 tablespoons.
Cook on lightly greased griddle or frying pan.
Cook until a few bubbles appear on top.
Turn to brown other side. Serve with honey or syrup.
