Sweet Potato Croquettes - cooking recipe

Ingredients
    2 c. mashed boiled sweet potatoes
    2 Tbsp. sugar
    1 Tbsp. melted butter or margarine
    1/2 tsp. salt
    1 egg, well beaten
    1/4 c. raisins or 3/4 c. chopped nuts or 1/4 c. raisins plus 1/2 c. chopped pecans
    flour
    bread crumbs
    vegetable oil
Preparation
    Combine all ingredients, except flour, bread crumbs and oil. Shape mixture into rolls measuring approximately 1 x 2. Roll in flour, then in bread crumbs. Fry in very hot oil until brown. Drain on paper towels.
