French Oven Beef Stew - cooking recipe

Ingredients
    2 lbs. beef stewing meat
    2 medium onions, cut in eighths
    3 stalks celery, chunked
    4 carrots, quartered
    1 c. tomato or V-8 juice
    1/3 c. tapioca
    1 Tbsp. sugar
    1/4 tsp. pepper
    1/2 tsp. basil
    2 medium potatoes (sliced 1/4-inch thick)
Preparation
    Combine beef, onion, celery and carrots in a 4-quart casserole. In a small bowl, combine tomato or V-8 juice, tapioca, sugar, pepper and basil.
    Pour over meat and veggies.
    Cover; bake in a preheated 300\u00b0 oven for about 2 1/2 hours.
    Add potatoes.
    Cover. Cook 1 hour longer.
    Stir occasionally during last hour.
    Serves 6.
