Poppy Seed Dressing - cooking recipe

Ingredients
    1 1/2 c. sugar
    2 tsp. dry mustard
    3 Tbsp. onion juice
    1/2 tsp. salt
    1 c. cider or wine vinegar
    3 Tbsp. poppy seed
    2 c. safflower oil
Preparation
    In mixing bowl, combine dry ingredients.
    Add the onion juice followed by the vinegar.
    Use whisk and mix until all the sugar is dissolved.
    With a mixer on low speed, slowly add the oil.
    You are making an emulsion and it will take a while for the mixture to accept the oil.
    Add poppy seed and mix a few moments more.
    Makes around 3 1/2 cups.
    Cover and keep refrigerated.
    This dressing is delicious on fresh fruit.
