Salmon With Black Bean Sauce - cooking recipe

Ingredients
    4 Market Day salmon fillets, thawed
    President's Choice black bean and garlic sauce (from Jewel)
    1 red pepper
    1 yellow pepper
    1 large carrot
    1 zucchini squash (optional)
    1 yellow squash (optional)
    8 scallions
Preparation
    Cut peppers, carrot and squash into julienne strips.
    Trim tops of scallions off to one inch above white parts.
    Place one salmon fillet in center of each of 4 large aluminum foil squares. Coat each fillet generously with black bean sauce.
    Top with 1/4 of each vegetable.
    Fold up salmon packets securely.
    Place on a cookie sheet.
    Bake in a 350\u00b0 oven for 35 to 45 minutes, until salmon is flaky.
