Zucchini Casserole - cooking recipe

Ingredients
    2 medium zucchini, grated
    2 medium carrots, grated
    1 medium onion, grated
    1 small jar chopped pimento, undrained
    1 can cream of mushroom soup
    1 stick margarine, melted
    1 (8 oz.) carton sour cream
    1 pkg. cornbread stuffing
Preparation
    Grate zucchini, carrots and onion.
    Add pimento with liquid, soup and sour cream.
    In another bowl, pour melted margarine over stuffing.
    Layer vegetable mixture and stuffing to fill a 1 1/2-quart greased casserole dish.
    Bake at 350\u00b0 for 30 minutes. This may be divided and frozen before baking.
    Thaw and heat uncovered in microwave if you bake it first.
