Zucchini Pie - cooking recipe
Ingredients

3 c. refrigerated loose-pack hash brown potatoes
1 beaten egg
1/4 c. chopped onion
1/4 c. grated Parmesan cheese
2 medium zucchini, sliced thin
1 clove garlic, minced
1 Tbsp. margarine or butter
3 beaten eggs
3/4 c. shredded Swiss cheese
1/2 c. milk
2 tsp. fresh oregano or 1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper
Preparation

In large bowl, combine 1 egg, onion and Parmesan cheese.
Stir in potatoes.
Pat mixture into a 9-inch pie plate or a 10-inch quiche dish.
Bake, uncovered, in a 400\u00b0 oven for 35 to 40 minutes until golden.
Cool slightly; reduce oven to 350\u00b0.
In large skillet cook zucchini in garlic and butter until just tender. Cool and arrange on crust.
In mixing bowl combine remaining 3 eggs, cheese, milk, oregano, salt and pepper.
Pour over zucchini.
Bake at 350\u00b0 for 25 to 30 minutes.
