Fresh Apple Cake - cooking recipe

Ingredients

2/3 c. sugar
1/4 c. oil
1 egg
1 tsp. vanilla
2 c. chopped apples
1 c. flour
1 tsp. cinnamon
1 tsp. soda
1/2 c. chopped pecans (optional)

Preparation

Stir sugar into apples; let set while you assemble other ingredients.
Add oil, egg and vanilla.
Stir together.
Sift flour with cinnamon and soda.
Add dry mixture; stir.
Makes 8 to 9 cupcakes.
Bake at 350\u00b0 for 12 to 15 minutes until brown on top.
