Applesauce - cooking recipe

Ingredients
    6 apples
    approximately 1/2 c. sugar
    1 tsp. cinnamon
1/2 tsp. vanilla or few drops almond extract
Preparation
Wash apples and cut into quarters.
Place in saucepan and partly cover them with water.
New apples require very little water.
    Stew the apples until tender.
Put them through a strainer or ricer.
Return the strained apples to the saucepan.
Add enough sugar to make them palatable.
    Boil them for 3 minutes.
    Sprinkle with cinnamon.
(If served hot, add 1 teaspoon of butter; if served cold, add 1/2 teaspoon of vanilla.)
If applesauce is to be served with pork, add 1 to 2 teaspoons horseradish.
