Woo'S Blue-Plate Special Meat Loaf(In Honor Of Stallion, "Clifton Boy") - cooking recipe

Ingredients
    1 lb. ground beef chuck
    1/2 lb. ground veal stew meat
    1/2 lb. ground pork shoulder
    2 Tbsp. bacon fat
    1 medium onion, finely chopped
    2 large cloves garlic, finely minced
    1 Tbsp. finely chopped parsley (optional)
    1 tsp. salt
    1/2 tsp. dried thyme (optional)
    1/2 tsp. dried sage
    1/2 tsp. freshly ground black pepper
    1/2 c. red wine (beef broth may be substituted)
    3/4 c. plain packaged bread crumbs
    1 large jumbo egg, beaten
    1/2 c. mayonnaise (not salad dressing)
Preparation
    In a large bowl, mix ground beef, veal and pork lightly with fork; set aside.
    In saute pan, heat bacon fat.
    Add onion and garlic; saute until soft and translucent.
    Add parsley, salt, thyme, sage and pepper.
    Stir in wine (beef broth if one prefers). Cook over high heat, stirring, until wine is nearly evaporated. Remove from heat and let cool.
