Fruity Oat-Bran Muffins - cooking recipe

Ingredients
    1 1/2 c. oat bran
    1 1/3 c. quick cooking oats
    1 1/2 c. all-purpose flour or 2/3 c. all-purpose flour and 2/3 c. whole wheat flour
    1/4 c. sugar
    2 tsp. baking soda
    1 tsp. salt
    2 tsp. cinnamon
    2 whole eggs or 1 whole egg and 2 egg whites
    5 to 6 ripened bananas, mashed (approximately 2 c.)
    1 (16 oz.) can crushed pineapple, packed in juice
    1/3 c. vegetable oil
    1/4 c. honey
    1 tsp. vanilla extract
Preparation
    Combine oat bran, oats, flour(s), sugar, baking soda, salt and cinnamon in a large bowl.
    Set aside.
    In another bowl mix remaining ingredients.
    Combine with dry ingredients; do not overmix.
    Coat two 12-muffin tins with nonstick cooking spray or line with muffin cups.
    Fill each 2/3 full with muffin mixture. Bake at 375\u00b0 for 20 minutes or until browned.
