Rhubarb Bread - cooking recipe
Ingredients

1/3 c. margarine
1 1/4 c. brown sugar, packed
1 Tbsp. vanilla
2 tsp. baking powder
1/2 tsp. salt
1 1/2 c. chopped rhubarb
2 eggs
1/4 c. milk
2 c. flour
1/2 tsp. baking soda
1/2 c. chopped nuts
Preparation

Preheat oven to 325\u00b0.
Grease and flour 2 (7 1/2 x 3 1/2-inch) loaf pans.
Set aside.
In a large mixing bowl, cream margarine and sugar.
Add eggs, milk and vanilla.
Combine flour, baking powder, baking soda and salt.
Stir into the creamed mixture. Fold in rhubarb and nuts.
Spoon batter into prepared pans.
Bake for 45 to 50 minutes.
Wrap and serve the following day for the best flavor.
