Eggplant Supreme - cooking recipe

Ingredients
    1/4 c. onion, chopped
    1/4 c. green pepper, chopped
    1/3 c. olive oil
    1 large eggplant
    1 lb. ripe tomatoes
    1/4 tsp. garlic powder
    1/8 tsp. oregano, crushed
    1 tsp. seasoned salt
    1 tsp. salt
    1 c. cooked rice
    1 c. Cheddar cheese, grated
    1 c. mushrooms (if desired)
Preparation
    Brown onion and pepper slowly in olive oil.
    Peel eggplant and tomatoes; cut into 1-inch cubes.
    Add to onion and pepper; sprinkle seasonings.
    Mix. Spoon about 1/3 mixture into 2-quart baking dish. Top with 1/2 rice.
    Repeat layers; top with eggplant.
    Cover and bake for 45 minutes, or until eggplant is tender.
    Remove; sprinkle with cheese.
    Bake for 15 minutes, uncovered, or until cheese has melted.
    Serves 6.
