Apple-Raisin Muffins - cooking recipe

Ingredients
    4 c. crisp cooking apples, diced
    1 c. sugar
    1 c. chopped walnuts
    2 beaten eggs
    1/2 c. oil
    1 tsp. vanilla
    2 c. flour
    2 tsp. baking soda
    2 tsp. cinnamon
    3/4 tsp. salt
    1/2 c. golden raisins
    1/2 c. currants
Preparation
    Toss apples with sugar and walnuts; set aside.
    Add oil and vanilla to beaten eggs.
    Sift dry ingredients together.
    Stir in raisins and currants.
    Add dry ingredient mixture to egg mixture. Add apples; stir until combined.
    Spoon into greased muffin tins. Bake at 350\u00b0 for about 25 minutes, or until muffins spring back when touched and pull away from side of tin.
