3 Tbsp. cornmeal
1 Tbsp. flour
1 Tbsp. Parmesan cheese
1/2 c. buttermilk
salt and pepper
Preparation

Mix all dry ingredients thoroughly.
Slice vegetables 3/8 inch thick.
Dip each slice of vegetable in buttermilk and roll in dry ingredients.
Panfry in a small amount of fat (oil) or deep fry until done.
